It is generally considered non-gelling and is used for viscosity control due to the weak associations that give it weak gel-thinning properties. It makes liquid preparations thick and glossy, without the use of oils or fats. Xanthan gum\u2019s consistent ability to retain water can be used to control syneresis and to delay ice recrystallisation (the growth of ice crystals) during freeze-thaw cycles. Ideal for sweet and savoury recipes such as fluid gels and sauces, or for thickening creams, pur\u00e9es and stocks.
