Egg white helps to stabilise dishes such as soufflés, flans and tartlets thanks to its natural ability to incorporate air into its molecular structure, which gives the dishes a light, fluffy texture in direct proportion to the whisking time. Furthermore, thanks to its powdered form, it helps in the creation of meringues using a liquid base such as fruit juices, smoothies or sauces. Furthermore, the product’s storage conditions have improved dramatically in terms of both space and shelf life.

Our Albume is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, which is 100% plastic-free.

HOW TO USE

Stabiliser
Replaces liquid egg white; mix whilst cold and incorporate air.
FOR USE IN COCKTAILS AS A PRE-BATCH, DISSOLVE IN LUKEWARM WATER.

DOSAGE

Recommended dosage: 20 g/l.

The product is free from chemicals, additives or preservatives, making it a pure and safe product for food use.

The product contains Eggs;
it cannot therefore be guaranteed to be safe for those with food intolerances or allergies relating to eggs.

It begins to coagulate at a temperature of 62°C or above.
The product is safe for food use and has no contraindications. Store in a cool, dry place, away from direct heat sources.
