These are crackling candies made from premium sugar, crystallised and carbonated through a process of crystallisation in an air vacuum with the addition of carbon dioxide, then coated with chocolate to prevent it from bursting until consumption, to provide a popping sensation in the mouth. An ingredient that can add a new dimension to desserts, cakes and sweets and is ideal for decorating and flavouring cakes, mousses, ice-creams, sorbets, jellies, cupcakes, pastries, desserts and cocktails or enjoyed more simply as a dessert.
