It is a potassium salt of tartaric acid extracted from grapes or tamarind. It is a natural raising agent used in conjunction with bicarbonate of soda to make dough rise: it is ‘activated’ in the presence of water and, through a chemical reaction, its slight acidity produces carbon dioxide gas, thereby allowing cakes to rise and giving them a soft texture without making them heavy. When used on its own, it helps to stabilise egg proteins and create a firmer, longer-lasting foam that can then be used to make desserts such as cakes and meringue biscuits.
