A stabiliser for ice cream and sorbets, specifically designed for mixtures made using a traditional ice cream maker, and based on plant-derived fibres and flours. By allowing the mixtures to incorporate more air, it enhances their creaminess and the depth of flavour. It also helps preserve the structure of ice cream at low temperatures, protecting it from sudden changes in temperature and helping to prevent and delay the formation of ice crystals during storage.

Our Manteca is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.

HOW TO USE

Stabilizzante per gelati e sorbetti
Mescolare con la base gelato a freddo e riscaldare a una temperatura superiore a 85°C.

DOSAGE

Recommended dose: 20 g/l.

Glucose syrup, emulsifiers (E472e, E471), dietary fibre, milk protein, lemon fibre, carob seed flour (E410).

The product is free from chemicals, additives or preservatives, making it a pure and safe product for food use.

The product contains Milk (lactose);
it cannot therefore guarantee safety for those with lactose intolerance or food allergies related to lactose.

The product is safe for food use and has no contraindications. Store in a cool, dry place, away from direct heat sources.
