Agar-agar is a completely natural gelling agent derived from certain types of red seaweed; it contains no calories and is absorbed only minimally by the body. It can be used to create firm (non-elastic), glossy, heat-resistant and thermoreversible gels; the gelled product can therefore be melted down several times and then set again. Thanks to its heat resistance, the jellies produced can be used to create innovative accompaniments suitable for any type of dish.

Our Agar2 is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.

HOW TO USE

Gelling agent
Mix whilst cold first, then bring to the boil (withstands temperatures up to 60°C).

DOSAGE

– Soft gelatine: 5 g/l;

– Cutting gelatine: 10 g/l.

Agar-agar (E406).

The product contains no chemicals, additives or preservatives, making it a pure and safe product for food use.

Allergen-free
It contains no traces of gluten, lactose, nuts or other common allergens, ensuring it is safe even for those with food intolerances.

Its effectiveness may be impaired or slowed down in the presence of tannic acid or when heated for prolonged periods at a pH between 5.5 and 8 (water and dairy products).
The product is safe for food use and has no contraindications. Store in a cool, dry place, away from direct sources of heat.
