Transglutaminase is an enzyme produced by microbial bio-fermentation with the ability to cross-link or ‘melt’ proteins. Easy to handle and without altering the taste, it is used in cooking as a glue for meat and fish. The greatest advantage of its unique functionality is that it can almost completely reduce meat waste, allowing normally discarded pieces to be joined into one compact piece of meat.

Our Colla is sold in a recycled plastic bag, packaged in a modified atmosphere to guarantee freshness and quality.

Enzima is a product line used to optimise performance in the production of meat products.

Ingredients

Transglutaminase, sodium caseinate (E469), maltodextrin, dextrose.

The product is free of chemicals, additives or preservatives, making it a pure and safe product for food use.

Allergens

The product contains Milk (lactose); it cannot therefore guarantee safety for those with lactose intolerance or food allergies.

Warnings

The higher the protein content, the greater the functionality of the product, but it loses power in the presence of fat. It is safe for food use and has no contraindications. Store in a cool, dry place, away from direct heat sources.

Use

Adhesive
Depending on use, either sprinkle dry directly on the proteins concerned or moisten first with water and knead the proteins. It acts as a "glue" by fusing the meat proteins together.

Dosage

7-20 g per kg of protein, depending on the type of meat and fish.
