Amidated pectin (LMA) is a type of low-methoxyl pectin extracted from selected, high-quality fruit. Compared to high-methoxyl or non-amidated pectins, it is capable of gelling over a much wider pH range and is less dependent on the presence of calcium ions, making it far more versatile. Amidation also enables the pectin to form thermoreversible gels. This broad-spectrum pectin is ideal for confectionery and for the production of jams, marmalades, syrups and jellies.

Our Pectina LMA is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.

HOW TO USE

Gelling agent
Disperse whilst cold, allow time for hydration, then heat to above 80°C.

DOSAGE

Recommended dose: 10 g/l.

Amylated pectin (E440ii).

The product is free from chemicals, additives or preservatives, making it a pure and safe product for food use.

Allergen-free
It contains no traces of gluten, lactose, nuts or other common allergens, ensuring it is safe even for those with food intolerances.

The product is safe for food use and has no contraindications. Store in a cool, dry place, away from direct heat sources.
