Gellano gum is a naturally occurring gelling agent derived from microbial metabolism. Characterised by its high elasticity and heat resistance, it is used in many sweet and savoury food preparations such as tagliatelle, macaroni and gelatine-based ravioli, which require extremely elastic and heat-resistant gels.

Our Gellano is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.

HOW TO USE

Gelling agent
Mix whilst cold, then bring to the boil. Once cooled, leave to set for at least 2 hours. Essential for producing incredibly elastic and heat-resistant gels.

DOSAGE

Recommended dosage: 15 g/l.

Gellan gum (E418).

The product is free from chemicals, additives or preservatives, making it a pure and safe product for food use.

Allergen-free
It contains no traces of gluten, lactose, nuts or other common allergens, ensuring it is safe even for those with food intolerances.

Any solid ingredients (e.g. sugars) should only be added after the product has been rehydrated.
The product is safe for food use and has no contraindications. Store in a cool, dry place, away from direct heat sources.
