K Carrageenan is a gelling agent extracted from certain species of red algae. Of all gelling agents, it has the fastest gelling rate, a characteristic that makes it particularly suitable for creating coatings and glazes. Capable of forming stable gels in the presence of salts, it allows for the creation of gels of varying consistencies, from soft to firm; this characteristic makes it ideal for products such as jellies, puddings and gelled desserts. It also helps prevent the separation of suspended ingredients by keeping the mixture uniform, which is why it is often used in dairy products such as yoghurt and plant-based milks.
Our K Carragenina is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.
Gelling agent
Mix whilst cold, then heat to above 80°C. Thanks to its rapid gelling rate, it is particularly suitable for coatings and glazes.
Recommended dose: 25 g/l.
