Methylcellulose is a gelatin made from purified cellulose, which dissolves in cold water and gels when heated. When heated above 45°C, it has the ability to create a gel that will become soft again when cooled. It replaces the coagulation of egg whites in preparations, allowing recipes such as dumplings, cupcakes, meringues and soufflés to be created without the use of eggs.

Gelly is a line of gelling agents of natural origin that make it possible to create more or less consistent jellies depending on the product used.

Gelling agent
Mix directly into the preparation concerned and leave to stand for 12 hours. Alternatively, if you wish to create a base, bring water to 90°C, mix and leave to stand for 12 hours.
