Pacofix sorbet is the first sorbet stabilizer designed exclusively for sorbets made at Pacojet. It helps to make sorbets puffy and, above all, stable at low temperatures by promoting the formation of small crystals and increasing its resistance to heat. These characteristics make ita very versatile product, facilitating its application in hot dishes or hot/cold combinations.
Our Pacofix sorbet is sold in a recycled and recyclable aluminum tin with a green bio-plastic bag made from sugar cane, 100% plastic free.
Gelato is a unique product line created to add volume and stability to ice cream, mousse, creams and sorbets, sweet or savory.
Mono and di-glycerides of fatty acids (E471), locust bean gum (E410), methylcellulose (E461), carrageenan (E407), pectin (E440), sugars.
The product is free of chemicals, additives or preservatives, making it a pure and safe product for food use.

It contains no traces of gluten, lactose, nuts or other common allergens, ensuring safety even for those with food intolerances.

Stabiliser for sorbet
Mix with cold sorbet base and then bring to the boil.
Recommended dosage:
10 g/l per Pacojet glass.
