Tapioca maltodextrins are made from specially designed decomposed molecules of tapioca to have a reduced density. They have low sweetening power, provide no calories, and are used as a bulking agent. When mixed together with oil or general fatty liquids, they turn into a manipulable powder ideal for creating edible “stones” or sandy textures.
