A specialised thickener designed for setting hot mousses made using the siphon method. Its composition improves the stability and foaminess of liquids and, by gelling when heated, acts as a substitute for eggs. The mousses will remain stable and firm for as long as it takes to finish the creations and plate them up.
Our Spumafix hot is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.

Mix into the cold mixture and then heat to 80°C. Maintain a constant temperature by keeping the siphon in a bain-marie.
Recommended dose: 30 g/l.
