Dextrose, also known as glucose (100DE), is the most common organic compound found in nature: a simple sugar that plays an important role in the food industry, particularly in ice cream and confectionery. In the world of ice cream, it is not so much used for sweetening (its sweetening power is estimated at 70–75 per cent of that of sucrose) as for preventing sugar crystallisation and lowering the freezing point of the mixture. This gives the ice cream a soft, creamy texture, with the added advantage of not being too sweet. It is also useful for other food applications thanks to its ability to enhance flavours. It is, moreover, a good bacteriostatic agent.
Our Dextrose is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.
Sweetener
Mix into both cold and hot foods. Use as a substitute for sucrose when a lower sweetening power is required.
