Brown stock

How to make a brown base with Xanthan, capable of preserving taste, colour, density and brilliance for our dishes.

Ingredients

  • Water 500 g
  • Brown stock
  • Red wine
  • Xantano 3 g

Process

  1. Add and combine water and Xanthan together
  2. Allow to stand for 1 hour
  3. Bind the brown base and red wine with the Xanthan base
  4. Add or decorate our preparation.
