Lecisoia is a natural emulsifier based on soy lecithin. It allows you to incorporate air into your liquid preparations, creating air with a thick foam. In solutions rich in fats, stability is lost. It is also used as an emulsifier for vegan preparations and confectionery products. Solutions with pH too low or alcoholic, the foaming properties decrease. The indicative dosage is 2-5g / lt.
