Carrageenan k is a gelatin obtained by extraction from certain species of red algae. Of all the gelatins, it is the one with the fastest gelation rate, which makes it particularly suitable for creating coatings and nappings. Able to form stable gels in the presence of salts, it makes it possible to create gels of different consistencies, soft and solid; this characteristic makes it ideal for products such as jellies, puddings and gelled desserts. It also helps prevent the separation of suspended ingredients by keeping the mixture uniform, which is why it is often used in dairy products such as yoghurt and vegetable milk.
Our K carragenina is sold in a recycled and recyclable aluminium tin with a green bio-plastic bag made from sugar cane, 100% plastic free.
Gelly is a line of gelling agents of natural origin that make it possible to create more or less consistent jellies depending on the product used.
Carrageenan (407), potassium chloride, maltodextrin.

Gelling agent
Mix cold and then heat above 80°C. Due to its fast gelling speed it is particularly suitable for coatings and nappings.
Recommended dosage:
