Calcium lactate is an extract of lactic acid, a non-hygroscopic white salt and a recommended source of calcium. It provides calcium salts in soluble form to react with alginate, gellan or certain types of carrageenan to form gels without heating. It is the essential product for use in the reverse spherification technique, for the production of caviar, pearls, spaghetti and spheres.

Our Calciolatte is sold in a recycled and recyclable aluminium tin, with a green bio-plastic bag made from sugar cane, 100% plastic free.

Sphere is a product line that allows you to develop the technique of spherification both in the kitchen and at the bar.

The product is free of chemicals, additives or preservatives, making it a pure and safe product for food use.

It contains no traces of gluten, lactose, nuts or other common allergens, ensuring safety even for those with food intolerances.

Use

Spherification
Essential for the reverse spherification process. Mix directly into the liquid to be spherified. It will be necessary to prepare a solution to "soak" the liquid to be spherified by combining Alginine and demineralised water.

Dosage varies depending on the presence of more or less calcium in the liquid to be spherified
