Evo Elements’ sodium alginate is essential for both direct and reverse spherification; it is also used as a thickener in dairy products. Sodium alginate is a naturally occurring chemical compound, extracted from the cell walls of large seaweeds native to the North Atlantic Ocean. It is an essential ingredient for both direct and reverse spherification; thanks to its ability to increase the volume and viscosity of liquid solutions, it is also used as an emulsifier and thickener in dairy products.
Our Algino is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.
Gelling agent
Essential for both direct and reverse spherification processes. Mix into the required solution.
– Direct spherification: 10 g/l to be mixed directly into the liquid to be spherified;
– Reverse spherification (alginate-based): 5 g/l to be mixed with demineralised water to create the solution in which the liquid to be spherified is to be ‘soaked’.
