Soya lecithin is a valuable natural emulsifier, stabiliser and preservative, with high nutritional value and easy digestibility. It allows you to incorporate air into your liquid preparations, creating a thick, dense foam. It is also used as an emulsifier in vegan confectionery preparations and products, and – for stability and functionality – in solutions that are too high in fat, have too low a pH, or in alcoholic solutions where its foaming properties are inhibited.
Our Lecisoia is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.
Emulsifier
Mix whilst cold; its properties work best at ‘room temperature’. Ideal for creating dense, frothy textures and often used as an emulsifier in vegan recipes.
Recommended dose: 2-5 g/l.
