Methylcellulose is a gel derived from purified cellulose; it dissolves in cold water and gels when heated. When heated above 45°C, it forms a gel that softens again once cooled. It acts as a substitute for the coagulation of egg whites in recipes, allowing you to make dishes such as gnocchi, tartlets, meringues and soufflés without using eggs.
Our Metilata is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.
Gelling agent
Mix directly into the relevant preparation and leave to stand for 12 hours. Alternatively, if you wish to make a base, heat water to 90°C, mix in the gelling agent and leave to stand for 12 hours.
