Iota carrageenan is a gel obtained by extraction from certain species of red algae. It forms clear, soft and elastic gels that remain stable when frozen and thawed, making it ideal for making puddings, mousses and fruit jellies. The versatility of iota carrageenan gel lies in its ability to set in the presence of calcium, making it perfect for use in milk and milk-based recipes.

Our Iota carrageenan is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.

HOW TO USE

Algal gelling agent
Mix whilst cold, then heat to 95°C. Leave to cool and set for at least 1 hour. Creates soft gels ideal for puddings, fruit jellies and much more.

DOSAGE

Recommended dose: 10 g/l.

Iota carrageenan (E407).
