Xanthan gum is a versatile thickener that is also used as a stabiliser, emulsifier and foaming agent; thanks to its exceptional purity, it is able to thicken without affecting the colour or flavour of the raw material. It is generally considered non-gelling and is used for viscosity control due to the weak associations that give it weak gel-thinning properties. It makes liquid preparations thick and glossy, without the use of oils or fats. Xanthan gum’s consistent ability to retain water can be used to control syneresis and to delay ice recrystallisation (the growth of ice crystals) during freeze-thaw cycles. Ideal for sweet and savoury recipes such as fluid gels and sauces, or for thickening creams, purées and stocks. It also helps to suspend solid particles, such as spices.

Our Xantano is sold in a recycled and recyclable aluminium tin, with a green bioplastic bag made from sugar cane, 100% plastic-free.

HOW TO USE

Thickener
Mix into both cold and hot mixtures. Thanks to its purity, it is ideal for giving liquid preparations a thick, glossy consistency.

DOSAGE

Recommended dose: 2-4 g/l.

It contains no traces of gluten, lactose, nuts or other common allergens, ensuring it is safe even for those with food intolerances.
