Carrageenan iota is a gelatin obtained by extraction from certain species of red algae. It can create crystalline, soft and elastic gels that are stable on freezing and thawing and are ideal for making puddings, mousses and fruit jellies. The versatility of Iota carrageenan gel lies in its ability to strengthen in the presence of calcium, making it perfect for use in milk and milk-based recipes.
Our Iota carragenina is sold in a recycled and recyclable aluminium tin with a green bio-plastic bag made from sugar cane, 100% plastic free.
Gelly is a line of gelling agents of natural origin that allow you to create more or less consistent jellies depending on the product used.

Algal gelling agent
Mix cold and then heat to 95°C. Allow to cool and stand for at least 1 hour. Makes soft gels ideal for puddings, fruit jellies and more.
Recommended dosage:
10 g/l.
