Xanthan gum is a versatile thickener that is also used as a stabiliser, emulsifier and foaming agent. Due to its particular purity, it is able to thicken without affecting the colour or taste of the raw material. It is mainly considered as a non-gelling agent and is used for viscosity control due to its tenuous gel-thinning properties. It makes liquid preparations thick and shiny, without the use of oils and fats. The constant water-holding capacity of xanthan gum can be used to control syneresis and delay ice recrystallisation (ice crystal growth) in freeze-thaw situations. It is ideal for sweet and savoury recipes such as fluid gels and sauces, or for binding creams, purees and bottoms. It also helps suspend solid particles such as spices.
