Sodium alginate is a naturally occurring chemical compound extracted from the cell walls of large algae originating from the North Atlantic oceans. It is an indispensable ingredient in the process of spherification, both direct and reverse; due to its ability to increase the volume and viscosity of liquid solutions, it is also used as an emulsifier and thickener for dairy products.

Our Algino is sold in a recycled and recyclable aluminium tin, with a green bio-plastic bag made from sugar cane, 100% plastic free.

Sphere is a product line that allows you to develop the technique of spherification in the kitchen and bar.

Ingredients

Sodium alginate (E401).

The product is free of chemicals, additives or preservatives, making it a pure and safe product for food use.

Allergens

Allergen-free
It contains no traces of gluten, lactose, nuts or other common allergens, ensuring safety even for those with food intolerances.

Warnings

The product loses functionality in the presence of sodium and with pH above 4. It is safe for food use and has no contraindications. Store in a cool, dry place, away from direct heat sources.

Use

Gelling agent
Indispensable for both spherification processes, direct and reverse. Mix to the required solution.

Dosage

- Direct spherification: 10 g/l to be mixed directly into the liquid to be spherified

- Reverse spherification (alginate base): 5 g/l to be mixed with demineralised water to create the solution in which to ‘soak’ the liquid to be spherified
