Isomalt is a type of sugar obtained through a process of hydrogenation of beet starch. It is a versatile and widely used ingredient in the world of confectionery due to its unique properties: unlike traditional sugar, it has a lower sweetening power, with about 45-65% of the sweetness of sucrose, and is prized above all for its excellent resistance to moisture and crystal clarity. These characteristics are ideal for creating decorations that require clarity and stability, such as sugar gems, transparent drops and glass effects. Isomalt does not crystallise easily, which allows confectioners to work with it at high temperatures to mould it into complex and detailed shapes such as flowers, animals or small sculptures.
Our Isomalto is sold in a recycled and recyclable aluminium tin with a green bio-plastic bag made from sugar cane, 100% plastic free.
