Mandarin Gel

Xanthan is a versatile thickener that can also be used as a stabiliser, emulsifier and foaming agent. Thanks to its special purity, it can thicken without affecting the colour or taste of the raw material.

Ingredients

  • 1 l mandarin juice
  • Xanthan Evo Elements 2/4 g per litre

Process

  1. Using an immersion blender, incorporate xanthan into the cold mandarin juice until completely dissolved.
  2. Adjust the dose of Xanthan to the desired consistency.
