Oysters with Lime Air

Lecisoia is a natural emulsifier based on soya lecithin. It allows you to incorporate air into your liquid preparations, creating airs with a thick foam.

Ingredients

  • Oysters
  • Lime juice
  • Lecisoia

Process

  1. Open the oysters and keep cool
  2. Using an immersion blender, incorporate 5g of Lecisoia per litre of lime juice.
